1/3 c. whole pecans
optional: 1 tsp. sugar
two portions of lettuce
1 TBS. balsamic vinegar
1 TBS. olive oil
2 TBS. dried cranberries or
dried cherries
2 TBS. goat cheese
salt and pepper to taste
Place pecans in toaster (sprinkle with sugar if you would
like) and toast for 10 15 minutes or until they begin
to smell.
Place the lettuce in a bowl and sprinkle with vinegar and
oil. Season with salt and pepper and mix well. Place in the
serving bowls.
Top the lettuce with the dried cranberries or dried cherries
and the warm pecans.
Sprinkle with the goat cheese and serve.
