2 chicken breasts, boneless
2 limes
1 tomato - cut into cubes
1 avocado - cut into cubes
3 scallions - sliced
lettuce for 2 salads in pieces
1 TBS. olive oil
1 tsp. balsamic vinegar
salt and pepper to taste
Trim the fat off the chicken breasts and marinate them in
the juice of 1½ limes for at least 20 minutes. (Reserve
the other half of the lime)
Fire up the grill! When hot, season the chicken breasts with
salt and pepper and cook the chicken breast for about 5 minutes
per side or until chicken is firm.
In a bowl, combine the lettuce, tomatoes, and scallions.
Sprinkle with the olive oil, balsamic vinegar and reserved
½ lime. Divide lettuce mixture into two serving bowls
and season with salt and pepper. Place the avocado on top
of the lettuce mixture and add the sliced chicken breast.
Serve warm.
