Gazpacho

6 Roma tomatoes - seeded and cut into cubes
1 English cucumber - peeled and chopped
2 - 5.5 oz cans of V8 tomato juice
5 scallions - sliced
1 red pepper - chopped
2 tsp. garlic - chopped
2 TBS. red wine vinegar
3 TBS. balsamic vinegar
1 tsp. Worcestershire sauce
juice of one lemon
few drops of Tabasco
salt and pepper to taste
Optional: fresh herbs like Basil or Cilantro

Prepare vegetables by cutting or chopping them into small pieces and place them in a large bowl. In a blender, add garlic, vinegars, Worcestershire sauce, V8 juice and ½ of the mixed chopped vegetables. Blend until smooth. Add this liquid mixture to the other half of chopped vegetables and mix. Season with salt, pepper, lemon juice and Tabasco. Serve cold as a soup or use it as a marinade for grilled chicken.
