1 cucumber
1 tomato
1 TBS. red onion - chopped
3 TBS. mayonnaise
1 TBS. balsamic vinegar
salt and pepper to taste
Peel the cucumber and slice into circles. Core the tomato
and cut in half and then slice into half moon shapes. Place
both in a bowl alternating to make a nice presentation and
sprinkle with onion. In a separate bowl, whisk together the
mayonnaise and balsamic vinegar until smooth. Season with
salt and pepper and then drizzle over the salad. Serve cold.
