Serves 4
1 head of broccoli
1/2 c. yellow onion — chopped
1 TBS. butter
2 c. chicken or vegetable stock — Minor Chicken base
1/4 c. milk or cream
1 tsp. lemon juice
few drops of Tabasco
salt & pepper to taste
Place a large pot over medium heat. Chop the onion and clean
and cut the broccoli into small flowerets. When the pot is
warm, add the butter and then sauté the onions for
1 minute. Add the broccoli and sauté for another minute.
Pour the chicken or vegetable stock in the pot and simmer
for 30 minutes. When the broccoli is soft, remove
the pot from the heat and use a hand blender* to puree the
soup. If you do not have a hand blender, carefully pour
the mixture into standing blender and puree. Replace the
pot with pureed soup to the heat and add the milk or cream,
lemon juice, Tabasco and season with salt and pepper. Taste
and adjust season if needed. For a thicker soup, continue
to cook over medium low heat until it thickens to desired
consistency.
* A hand blender is not the same as a hand mixer. See Tips
