Herb Roasted Potatoes

2 TBS. olive oil
2 TBS. fresh herb – chopped
(ex. basil or rosemary)
1 large potato – any variety
salt and pepper to taste

Preheat oven to 350°.

Place oil and chopped herb in a medium bowl. Scrub the skin of the potato clean and then cut into small square pieces. Add to bowl and mix so that each piece is coated with the oil/herb mixture.

Place potato pieces on a baking sheet that has been sprayed with non-stick spray. Season with salt and pepper.

Bake in oven for 30 – 40 minutes or until the potato pieces are golden brown.
