Fried Potatoes - Greek Style

1 large russet potato
2 scallions – sliced
2 TBS. red pepper – chopped
4 TBS. butter
2 TBS. feta cheese
salt and pepper

 Fill a medium size saucepan with cold water.  Peel and chop the potato into ½ inch cubes.  Place in water and add a pinch of salt.  Bring to a boil and allow to cook for 3 minutes.  Drain and set aside. 

Place a large frying pan over medium high heat.  When it begins smoking, add 1 TBS. butter and then the par cooked potatoes.  Cook for about 10 – 15 minutes, flipping the potatoes – adding more butter when pan dries out.  Make sure all sides are browned.

Add the last bit of butter and then the scallions and red pepper.  Cook for another 2 minutes and season with salt and pepper. Remove from heat and add the feta cheese.  Serve warm.
