Corn and Pine Nuts

10 oz. package of frozen corn
2 TBS. red pepper, finely chopped
2 scallions, sliced diagonally
3 TBS. pine nuts (toasted)
1/2 TBS. butter
salt and pepper to taste

Place frozen corn in a small bowl and soak in cold water until defrosted. Drain water. Toast pine nuts in toaster oven on 350° for about 8 – 10 minutes or until light brown. (Hint: set a timer to make sure the nuts do not burn.) Heat a large frying pan over medium low heat. When the pan is warm, add 1/2 TBS. of butter and let it melt. Add the corn and sauté for about 2 minutes. Add the red pepper, scallions, and pine nuts and sauté for about 5 minutes. Season with salt and pepper and serve warm.
