Cole Slaw
2 eggs - hard-boiled, chopped
1 c. carrots - chopped
½ c. red onion - chopped
3 c. cabbage - chopped
½ c. mayonnaise
1 TBS. apple cider vinegar
salt and pepper to taste

In a large bowl, combine eggs, carrots, red onion, and cabbage. In a small bowl, whisk together the mayonnaise and apple cider vinegar. Pour mixture over vegetables and mix. Season with salt and pepper and serve cold.
