½ head of cauliflower
1 TBS. olive oil
½ c. tomato - chopped
3 scallions, sliced
½ tsp. garlic - chopped
2 tsp. cilantro - chopped
salt and pepper to taste
Fill a medium sized saucepan with water and place over high
heat. Cut cauliflower into florettes. Place a small frying
pan over medium low heat and, when warm add olive oil. Add
the garlic and scallions and sauté for 1 minute. Add
the tomatoes and cook for 2 minutes.
When the water is boiling add a pinch of salt and add cauliflower.
Cook for about 3 - 4 minutes or when you begin to smell the
cauliflower cooking.
Add the cilantro to the tomato mixture and remove from heat.
Strain the cauliflower, place on serving plate and season
with salt and pepper. Top with tomato mixture and serve warm.
