| Asian Broccoli Salad |
1 large head of broccoli
1/2 of a red pepper
1 medium carrot
1/4 c. red onion- chopped
1/2 c. roasted cashews cut to bite size
salt and pepper to taste
* light on salt
Dressing:
3/4 c. mayonnaise
1 TBS. soy sauce
In a saucepan bring water to a boil and add a dash of salt.
Add the broccoli and allow to come to a boil again - immediately
remove from heat. Drain and shock the broccoli by running under
cold water. Place the partially cooked broccoli in a large bowl.
Cut 1/2 of a red pepper and the carrot into thin, short strips
and add to the bowl with the broccoli. Add the chopped onion
and the cashews.
Dressing: In a small bowl mix the mayonnaise and soy sauce.
Pour over vegetables and mix. Season with pepper and taste it.
Add salt if needed. Refrigerate and serve cold. |
