Pork with Apricot/Walnut Sauce

2 boneless, center cut pork chops
1/2 TBS. butter
2 TBS. apricot jam
1 TBS. honey
3 TBS. light corn syrup
1/2 tsp. cinnamon
1/3 c. toasted walnuts – chopped
salt and pepper to taste

Preheat oven to 350°. Place walnuts on a baking sheet and toast in oven for 10 – 12 minutes.

Place a frying pan over medium high heat. Season each pork chop with salt and pepper on both sides. When pan begins to smoke, add butter and then the pork chop. Sear both pork chops for 1 minute on each side and then place them in an oven safe dish. Cook in oven for 8 – 10 minutes.

In a 10 inch frying pan, mix together the jam, honey, corn syrup, and cinnamon. Place over medium heat and bring to a boil.
Mix in toasted walnuts and immediately pour over oven-cooked pork. Serve warm.
