Feta/Pine Nut/Broccoli Stuffed Chicken
2 chicken breasts
1/4 head of broccoli cut into
small florettes
1 scallion – chopped
1/4 c. feta cheese
2 TBS. pine nuts – toasted
2 TBS. butter
salt and pepper to taste

Place pine nuts in toaster oven at 350° and bake until light brown - about 10 minutes.

Prepare chicken breast by removing the fat. Taking a serrated knife, locate the thickest part of the breast and insert the knife in the side. Angle the knife towards the thin part of the breast and cut a pocket in the middle of the breast leaving only a small outer hole.

Preheat oven to 350°.

Place a small frying pan over medium heat. When the pan is warm, add 1 TBS. butter and then the scallion and broccoli. Cook for about 2 minutes.

In a small bowl, place the feta cheese, sautéed vegetables and the toasted nuts. Season with a little salt and pepper and mix together.

Stuff each breast with the filling and season each with salt and pepper.

Return the frying pan to medium high heat and wait until pan is very warm. Add 1 TBS. of butter (it should turn brown in the pan). Sear each chicken breast for about 1 minute per side. Place on a baking sheet pan and finish cooking in oven for 8–10 minutes.
Serve immediately.
