Shrimp Scampi

1/2 lb. raw shrimp – cleaned and de-veined
1/2 c. Spanish onion – chopped
2 stalks of celery – chopped
1/2 tsp. garlic – chopped
3 TBS. butter
1 TBS. olive oil
Rice or pasta

Place a frying pan over medium heat. When it is warm, add 2 TBS. of the butter and the olive oil. Sauté the onion, celery and garlic for 2 minutes. Add the last TBS. of butter and the shrimp stirring until shrimp are no longer opaque. Serve over rice or pasta.
