1/2 lb. cusk or sea bass or
similar fish
de-boned, skin removed,
and cut into strips
1 c. breadcrumbs
1/4 c. chopped fresh herbs (rosemary, thyme and basil)
2 eggs
2 TBS. milk or half & half
1/2 c. all-purpose flour
1 1/2 c. peanut oil or vegetable oil
salt and pepper to taste
Pre-heat oven to 350°.
Place oil in a small frying pan over medium heat.
CAUTION: heated oil can burn heat to medium and
no higher
Place the flour in a small bowl. In another small bowl, whisk
together the eggs and milk. In a third small bowl, mix breadcrumbs
and herbs. Season the strips of fish with salt and pepper.
Place them in the flour and then dip the strips in the egg
wash. Finally, roll in the bread/herb mixture.
When oil is at the correct temperature of 375° (should
rapidly bubble when you drop a few breadcrumbs in it), fry
the strips until they are golden brown. Place strips on a
sheet pan and cook in the oven for about 5 minutes. Serve
with tartar sauce.
