| Nut Crusted Chicken |
2 chicken breasts
1/2 c. chopped nuts (cashews, pecans or pistachios)
1 c. breadcrumbs
1 egg
1 TBS. water
1/3 c. all-purpose flour
1/2 c. vegetable oil
salt and pepper to taste
Prepare chicken breasts by removing the fat and then season
with salt and pepper.
Put the oil in a small frying pan and place over medium heat.
Preheat the oven to 350°.
Get three small bowls or containers. Combine nuts and breadcrumbs
and place in one bowl. Place the egg with a TBS. of water in
another bowl and beat with fork. In the last bowl place the
flour.
Dip the chicken breasts in the flour, then in the egg mixture,
and finally in the breadcrumbs/nut mixture. Place in the frying
pan and cook for about 1 minute on each side. Place partially
cooked chicken on a baking sheet pan and finish cooking in the
oven for about 810 minutes. Serve warm. |
