Chicken Salad


2 chicken breasts
1/2 c. celery, chopped
1/4 c. yellow onion, chopped
2 to 3 TBS. mayonnaise
Old Bay seasoning to taste
salt and pepper to taste

Fill a 4 qt. saucepan 3/4 of the way full with water. Place over high heat and bring to a boil. Remove fat from chicken breasts and then slice chicken into 3 ä 4 (1-inch wide) strips. Add salt to boiling water and then add the chicken. Boil for about 5 minutes. Drain water, remove chicken from pan and allow to cool.

When chicken is cool, cut into bite size pieces and place into a medium-sized bowl. Add celery, onion and mayonnaise and mix with a spoon. Season with the Old Bay, salt and pepper. Taste and adjust seasoning if necessary.

Chicken salad can be made into a sandwich, placed on lettuce or served on crackers.
