| Dijon Chicken Fingers |
1 chicken breast
2 TBS. Dijon mustard
1 tsp. butter
salt and pepper to taste
Trim the chicken breast of any fat and cut into short strips
about 1 inch wide. Place the mustard in a small bowl. Season
the chicken strips with salt and pepper. Place strips into bowl
of mustard and allow to marinate while frying pan is being heated.
Place frying pan over medium high heat. Allow the pan to begin
smoking and then add the butter. Add the chicken strips to pan
and allow chicken to cook for 30 seconds. Flip each piece over.
Continue to flip every 30 seconds for another 3 5 minutes
until chicken is cooked through. Serve warm. |
