2 boneless, skinless chicken breasts
1 tomato chopped
Lettuce
2 scallions sliced
1 c. shredded cheddar cheese
4 tortillas
1 TBS. butter
1 tsp. chili powder
1 tsp. cayenne pepper
Salt and pepper
Sour cream
Prepare the vegetables chop the tomato and scallions
and cut the lettuce into strips. Place a large frying pan
over medium high heat.
Remove fat from chicken and slice each breast in half horizontally.
Then cut the chicken into thin strips. Sprinkle the chicken
with the chili powder, cayenne pepper and salt and pepper.
Place tortillas in the oven or toaster oven on 300º to warm
them up.
When the pan begins to smoke, add the butter and then the
strips of chicken. Cook rotating the pieces for about
2 minutes.
Place the cooked chicken in the middle of each tortilla.
Sprinkle the cheese on top of the chicken and then finish
with the lettuce, scallions and tomatoes. Serve immediately
with a side of sour cream.
