1/4 c. water
2 TBS. granulated sugar
1/2 tsp. salt
1 tsp. fresh lemon juice
1 c. blueberries
1/4 tsp. cinnamon
1 TBS. butter
4 boneless pork chops
salt and pepper to taste
Combine the water, sugar, salt, lemon juice, and blueberries
in a saucepan and place over medium low heat. Allow the mixture
to come to a boil. Reduce heat to low and simmer for 20-25
minutes, stirring occasionally, until it becomes a thick sauce.
Remove from heat and stir in cinnamon.
Place a large frying pan over medium heat. When the pan is
very hot, add butter and then the pork chops that have been
seasoned with salt and pepper. Sear both sides of the pork
then lower the heat to low. Cover pan with a lid and cook
for another 5-8 minutes, turning the pork chops over at least
twice. Check the internal temperature with a meat thermometer.
The temperature should be 155 . Serve warm with blueberry
sauce.
