Pie Crust
2 c. all-purpose flour
1 tsp. salt
1/3 c. butter — chilled — cut into small pieces
1/3 c. shortening
1/3 c. ice water (* see note)
extra flour for rolling

Place the flour and salt into a medium-sized bowl. Add the butter and shortening. Using a pastry blender, mix until it looks like coarse meal. Add the water and mix with a wooden spoon until dough begins to come together. Form dough into a ball using your hands. Divide dough into halves and flatten both sections into disks. Wrap both halves in plastic wrap separately and chill for at least a half hour.

*Depending on the weather, you may need to add a little more water if the dough does not come together. Add a few drops at a time until it does. sIf it is a moist day, you may want to add less than 1/3 c. water to avoid the dough being too wet.
